I’ve been making these for my family since I started my keto journey, and they’ve become our go-to lunch when we want something satisfying but light. The best part?

Even my non-keto husband requests these now. There’s something magical about how the crispy bacon plays with the cool, crunchy lettuce and juicy tomatoes. Plus, you can prep everything ahead and assemble when you’re ready to eat.

Ingredients

  • 8 strips thick-cut bacon
  • 1 large head butter lettuce (or iceberg)
  • 2 medium tomatoes, sliced
  • 1/2 cup mayonnaise (avocado mayo preferred)
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels and set aside to cool.
  2. While bacon cooks, carefully separate lettuce leaves and wash gently. Pat completely dry with paper towels. You want 8 large, cup-shaped leaves.
  3. In a small bowl, mix mayonnaise, chives, lemon juice, and garlic powder. Season with salt and pepper. This is your keto-friendly “special sauce.”
  4. Break cooled bacon into bite-sized pieces. Slice tomatoes into 1/4-inch thick rounds.
  5. Assembly time! Lay each lettuce leaf flat, spread about 1 tablespoon of the mayo mixture, add tomato slices, then top with bacon pieces. Fold like a taco and enjoy immediately.
