Creamy Tuscan garlic chicken with spinach and sun-dried tomatoes

Ingredients

  • 4 boneless skinless chicken breasts (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh basil for garnish (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.

  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and set aside.

  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
